Strawberries Galore




I got it in my head that it would be fun to go strawberry picking.  My sister bowed out, and she happened to be in North Carolina this weekend so thought it would be great for us to go.  Saturday was beautiful so my mom and I headed to Woods Orchard.  I knew I don't have a good grasp on measurements, but obviously I have no grasp on them!

We picked for an hour and ended up with 18 pounds of strawberries.  Umm, yeah, just a few. :)

Thankfully I had read Laura at Sharpen Your Scissors' post about flash freezing so now have some quart sized freezer bags full of strawberries.  I will be able to have strawberry-anything I want for the next year or so!

Overall it was fun and we'll probably go back to pick peaches in another month or two, once they're ready.  However, we will count as we pick, not just fill up the container they give us to use.

  2. Strawberry Pie (makes 2)

    Two Refrigerated Pie Crusts
    2 Cups 7-up
    2 TBSP Cornstarch
    1, 3 oz Package of Strawberry Jello
    8 Cups Fresh Strawberries, Cleaned and Trimmed
    Whipped Cream to Serve

    Bring cornstarch and 7-up to a boil, simmer until thickened.
    Add Jello, stir until dissolved, cool.

    Bake pie crusts according to directions, cool.

    Place strawberries in pie crust.
    Pour cooled sauce over strawberries.
    Refrigerate until ready to eat, at least 2 hours.

    Top with whipped cream and eat!

    This is the recipe I used for the strawberries out of my garden and Paul and I devoured it- you should give it a try it is SUPER easy =)

  3. Mmm, I'll definitely have to try the pie. I'll have to wait a week or two, though, as I think we're all over them for now. Haha. :)
